Summer Menu Round-Up #1

This post kicks off my summer menu round-up series. Every Monday throughout the summer, I plan on sharing a round-up of menu ideas. I will be sharing everything from quick and easy ideas for hot summer nights to creative ideas for summer entertaining.

This first round-up features a meal that would be delicious served at a backyard barbecue, but it’s easy enough for a busy weeknight.

Margarita Chicken with Fiesta Rice

This chicken is great for both a weeknight meal or a barbecue with friends. You can mix up the marinade ahead of time, then when dinner time rolls around you can just throw the chicken on the grill while the rice cooks.  So easy and so delicious!

Fiesta Corn Saute

Round out the meal with this delicious corn dish. It takes just minutes to prepare and it’s bursting with fresh summer flavor!

Raspberry Float

Cool off at the end of the meal with these fruity floats. Your whole family will love this refreshing treat!
