Cooking Inspiration
I have a confession to make……I was in a cooking rut a while back. I was fresh out of inspiration and had little interest in making anything too complicated. Does that ever happen to you?
When I find myself in a rut, I’ll often scroll through Pinterest looking for inspiration. So that’s exactly what I did. As I had hoped, I found all the inspiration that I needed for a delicious dinner.
So Easy to Make
I did find an old recipe for goulash and it got me thinking….and actually feeling a little inspired. The recipe looked easy enough and seemed perfect for a weeknight dinner. But, I knew I had to make some changes.
The original recipe had a LOT of sodium in it, so I cut way down on that. I also felt like the recipe needed more veggies, so I added red bell pepper. It turned out to be really easy to prepare and it was delicious!
This has now become one of my families favorite recipes. My husband and I have been known to fight for the leftovers the next day, lol.
If you’re looking for an easy-to-prepare, one-pot wonder, you’ll want to give this goulash a try. You won’t be disappointed! By easy, I mean that it only takes about 45 minutes from start to finish with 25 minutes being hands off.

What Do I Need To Know About Making Old Fashioned Goulash?
- If you want to further bump up the veggies, cubed zucchini is a delicious addition.
- In a pinch, if you’re out of crushed tomatoes, you can substitute tomato sauce. But, if you have crushed tomatoes on hand, you’ll definitely want to use them to get a thick, slightly chunky sauce.
- The recipe can easily be doubled. It also freezes well, so you can have half tonight and freeze the rest to have on hand for a busy night.

Old Fashioned Goulash
Old fashioned goulash is an easy, healthy weeknight dish that's sure to please your family and get you in and out of the kitchen quickly.
Ingredients
- 1 lb ground beef
- 1 tsp olive oil
- 1 onion, chopped
- 1 bell pepper, chopped (whatever color you have on hand)
- 3 cloves garlic, finely chopped
- 1 tsp salt
- 1 tsp pepper
- 1 tbsp Italian seasoning
- 2 bay leaves
- 1 tbsp low sodium soy sauce
- 1 2/3 cups water
- 1 – 28 oz can crushed tomatoes
- 1/2 cup frozen peas
- 1 cup elbow macaroni, uncooked
Instructions
- Heat olive oil in a dutch oven over medium high heat.
- Add ground beef, break up with a spoon and brown until no longer pink.
- Add onion, bell pepper and garlic, sauté for about 5 minutes until onion is translucent.
- Stir in salt, pepper, Italian seasoning and bay leaves.
- Stir in water, crushed tomatoes and soy sauce, bring to a bubble.
- Reduce heat and simmer, covered, for 15 minutes.
- Stir in peas and macaroni.
- Simmer covered for 20-25 minutes, until macaroni is tender.
