Chipotle Ranch Crispy Chicken Pizza

It’s only one more week until the Superbowl, are you planning a party at your house?  I must admit that I’m not much of a football fan, but I do enjoy the Superbowl for all of the eating opportunities and the chance to socialize.  This year we’re having our kids over for a family party and we’ll feast on Nicole’s delicious Taco Dip, this incredibly addictive Sausage Cheese Dip, my family’s favorite Two Bean Chili and what I think will be the star of the show, this chipotle ranch crispy chicken pizza.

This pizza is made easy and extra delicious with Tyson Crispy Chicken Strips.  When they say extra crispy, they’re not kidding, plus they’re made with all natural ingredients!  When you combine these chicken strips with a creamy, spicy chipotle ranch sauce, along with a crust that’s perfectly crispy AND chewy, topped off with lots of cheese as well as fresh cilantro and avocado, you have absolute pizza nirvana!  I’m not even kidding.  It’s that good!

Before you run off the the store so that you can make this amazing pizza for yourself, let me tell you the secret to that perfectly crispy and chewy crust.  You must cook it at a ridiculously high temperature for a short amount of time.  That’s right, you’re going to set your oven for 550 degrees and in just 8 short minutes you’ll have a pizza that is cooked to perfection.  While it’s best to cook it on a pizza stone that’s been preheated in the oven, you could cook it on a preheated baking sheet, if you don’t have a stone.

Chipotle Ranch Crispy Chicken Pizza

  • 8 oz (about 1/3 of a 25 oz bag) Tyson Crispy Chicken Strips
  • 1 lb ball of your favorite pizza dough
  • flour
  • corn meal
  • 1/3 cup ranch dressing
  • 2 tsp chipotle pepper in adobo, minced
  • 2 tsp adobo sauce
  • 1 cup shredded Monterey jack cheese, divided
  • 1/4 cup shredded sharp cheddar cheese
  • 1/2 an avocado, diced
  • 2 tbsp fresh cilantro, minced

Preheat oven to 400 degrees and bake chicken strips according to package instructions.

Cut chicken strips into bite size pieces.

Once chicken is finished, place a pizza stone in the oven and increase heat to 550 degrees.

In a small bowl, combine ranch dressing, chipotle pepper and adobo sauce.

Sprinkle counter with flour and roll pizza dough out into a 12 inch circle.

Transfer dough to a pizza peel or an upside down baking sheet that’s generously coated with corn meal (this will help the pizza to slide off).

Spread ranch mixture evenly on pizza crust.

Sprinkle with 1/2 cup monterey jack cheese.

Top with chicken strip pieces.

Sprinkle remaining monterey jack  and the cheddar cheese over the chicken.

Gently shake pizza off of the pizza peel or baking sheet onto the preheated pizza stone.

Bake for 8 minutes, until the crust is golden brown and the cheese is bubbly.

Top with cilantro and avocado.

Slice and serve!
