Tex-Mex Roasted Sweet Potatoes

I love sweet potatoes and I especially love them when they’re roasted. A little olive oil and a hot oven gives the potatoes great caramelization and flavor. And, while they’re delicious simply prepared that way, they’re even better when you add some bold seasoning to the mix.
Enter Tex-Mex roasted sweet potatoes. They are a perfect balance of sweet and spicy.
The spice mixture creates the first layer of great flavor. Then, a Spicy Jalapeno Lime Vinaigrette takes these sweet potatoes to a whole new sweet and spicy level.
These Tex-Mex roasted sweet potatoes are a great side dish for so many different meals. They’re amazing with grilled chicken, pulled pork sandwiches, bratwurst, really just about anything.
I was even thinking, as I’m sitting here typing and my stomach’s telling me it’s time to eat, that these would taste great topped off with a fried or poached egg. What a great brunch dish that would be, right?
But whatever you decide to serve these sweet potatoes with, you really do need them in your life, trust me.
Tex-Mex Roasted Sweet Potatoes

Ingredients
- 1 tsp chili powder
- 1 tsp smoked paprika
- 1/2 tsp garlic powder
- 1/2 tsp dried oregano
- 1/2 tsp cumin
- 1/2 tsp salt
- 1/2 tsp pepper
- 2 tbsp olive oil
- 2 - 2 1/2 lbs sweet potatoes, peeled and diced
- Spicy Jalapeno Lime Vinaigrette
- Fresh chopped cilantro for garnish, optional
Instructions
- Preheat oven to 425.
- Line a baking sheet with parchment paper.
- In a small bowl, combine chili powder through pepper.
- Put sweet potatoes on baking sheet.
- Drizzle with olive oil and then sprinkle with seasoning mix.
- Toss until sweet potatoes are well coated.
- Spread out in a single layer on the baking sheet.
- Bake in preheated oven for 30-35 minutes, until browned and tender.
- Drizzle with the spicy jalapeño lime vinaigrette and top with cilantro, if desired.
