Roasted Sun Dried Tomato Green Beans with Goat Cheese is an easy 15 minute side dish that pairs perfectly with chicken, fish or beef.
When it comes to side dishes, I’m always looking for something quick and easy. I’d rather focus most of my attention on the main dish. But that doesn’t mean that I don’t want my sides to be interesting and full of flavor.
That’s why I love roasted sun dried tomato green beans with goat cheese so much. From start to finish these delightful beans are ready in 15 minutes.
They’re not lacking in flavor either. I use sun dried tomatoes that are packed in olive oil and Italian herbs then I toss the green beans in some of the oil before I roast them. This imparts a delicious herby flavor on the green beans.
Once the beans are prepped, they go into the oven for about 10 minutes. To keep clean up easy, I always line the baking sheet with parchment paper. After the beans are roasted, they get a generous sprinkling of goat cheese.
Tips and Tricks for making Roasted Sun Dried Tomato Green Beans with Goat Cheese
- To keep prep work to a minimum buy beans that have already been trimmed and washed. You may pay a little bit more, but I feel the convenience is worth it.
- The recipe says to use 2-3 tbsps of goat cheese crumbles. If you really love goat cheese, use more. If you only want a hint of goat cheese, use less.
- I like to use goat cheese crumbles rather than a log of goat cheese. I just find it to be easier for this recipe.
- Don’t like goat cheese at all? Both bleu cheese crumbles and shredded parmesan would be good substitutes.
- I found my sun dried tomatoes packed in olive oil and herbs in the produce section of the grocery store. If you can’t find them there, check in the aisle where the canned tomatoes are.

Ingredients
- 1 (12 oz) pkg fresh green beans
- 1/4 cup julienne cut sun dried tomatoes packed in Italian seasoned olive oil
- 2-3 tbsp goat cheese crumbles
Instructions
- Preheat oven to 425 degrees
- Line a sheet pan with parchment paper for easy clean up.
- Toss the green beans and the tomatoes together along with some of the packing oil, until green beans are well coated.
- Spread out in a single layer.
- Roast in preheated oven for 10 minutes.
- Sprinkle with the goat cheese before serving.
