Now that fall is here, I’m definitely craving all things comfort food. How about you?

There’s something about the cooler temperatures and the shorter days that make me want hearty, stick to your ribs food. This beer braised pot roast most definitely fits into that category.

Beer Braised Pot Roast is Easy to Make

It also falls into the category of easy to make. The prep work is fairly minimal, which I love. There are just a few things you need to chop and then sauté a little bit of bacon, sear the roast and sauté the onion and garlic.

While that’s going on, you mix a few things together to make the braising liquid. Once that’s finished, it all goes into the oven for a few hours, which is where all the delicious magic happens.

Serve with Egg Noodles or Mashed Potatoes

Once this beer braised pot roast has spent its time in the oven, it comes out so tender and juicy. The bacon gives it a little bit of a smoky flavor and the beer and apple cider vinegar give it a slightly tangy flavor. It’s delicious with either egg noodles or mashed potatoes.

It’s Great as a Leftover

I even used some of the leftovers and made flatbreads for lunch. I just shredded the meat, spread it out on the flatbread, topped it with cheese and baked it until it was hot and bubbly. SO GOOD!

Beer Braised Pot Roast

Beer Braised Pot Roast is a hearty meal with meat that is tender, juicy and so flavorful. It's comfort food at its finest.

Cook Time 3 hours 35 minutes
Total Time 3 hours 45 minutes

Ingredients

  • 2 slices bacon, cut crosswise into small pieces
  • 1 (3 lb) chuck roast
  • 1 large red onion, sliced into 1/4 inch pieces
  • 2 cloves garlic, minced
  • 1 (12 oz) bottle lager style beer
  • 1 cup beef broth
  • 1 tbsp apple cider vinegar
  • 1 tbsp Worcestershire sauce
  • 1 tbsp spicy brown mustard
  • 1 tsp dried thyme
  • 1/2 tsp dried dill
  • salt
  • pepper

Instructions

  1. Preheat oven to 325 degrees.
  2. Heat a large dutch oven over medium heat.
  3. Add bacon and sauté until crispy.
  4. Remove bacon from pot and drain on paper towels.
  5. Season chuck roast with salt and pepper.
  6. Brown chuck roast on all sides in the bacon fat.
  7. Remove roast from pot.
  8. Add onions to pot and sauté until browned and softened.
  9. Add garlic and sauté for 30 seconds.
  10. Pour beer into pot, bring to a boil and cook, stirring frequently for 2 minutes.
  11. Whisk together beef broth, vinegar, Worcestershire sauce, mustard, thyme, dill, 1/2 tsp salt and 1/2 tsp pepper.
  12. Stir into pot with beer and onions.
  13. Bring to a boil.
  14. Add roast back to pot and bake in preheated oven for 2 hours, until meat is very tender.

Does This recipe call for 2 or 3 hours cooking time? At the top is says 3hrs35minutes cooking time while it says 2hrs at the end. Is there a step missing perhaps?
