Thursday’s Recipe Rerun – A Spring Dinner Party

Yep, I’m bringing it back – Thursday’s Recipe Rerun. It’s been a while, but I thought this was the perfect time to bring it back, since I have no kitchen right now.  Without a kitchen, cooking is a bit of a challenge.  Thankfully, we have a wet bar in the basement that I’ve been able to set up as a little makeshift kitchen, but it’s still awkward.  I think my slow cooker will be my best friend by the end of the kitchen project!

Now, onto this spring dinner party.  Whether you just want to have a few friends over for dinner or you’re hosting Easter at your house, this menu will fit the bill.  It’s relatively light and it’s bursting with fresh, springtime flavor.  As a plus, you can do a lot of the prep work ahead of time, so you can actually enjoy your own party.

Caprese Bruschetta

Start the party with this fresh tasting caprese bruschetta.  It’s basically a caprese salad on top of good crusty bread and it’s so delicious!

Blueberry Basil Soda Spritzer

Serve this blueberry basil soda spritzer along with the bruschetta.  It’s so refreshing and is sure to please all of your guests.  It’s great on it’s own for those who want something alcohol free and you can add a little vodka or gin for those who want something a little stronger.

Shrimp Scampi in Parchment

This shrimp scampi in parchment is perfect for the main course.  You can prepare the parchment packets earlier in the day and pop them in the oven shortly before dinner, so easy!  It’s a nice, light main dish with bright citrus flavor, perfect for springtime.

Sweet Peas with Bacon and Onion

What says spring more than sweet peas?  Add bacon and onion to the mix and you have a fantastic, flavorful side dish.

Drunken Strawberry Shortcake Supreme

Strawberry shortcake is always a springtime favorite and this version is totally over-the-top good!  It’s the perfect ending to a great dinner party.
