Ingredients
- 3 cups chopped or shredded rotisserie chicken
- 1 package pre-cut carrots, celery and onion (you can usually find this in the produce department)
- 2 - 32 ounce boxes chicken stock
- 2 cups uncooked short-cut pasta or egg noodles
- 1 loaf crusty French bread
Instructions
- Heat 1 tbsp olive oil in a large soup pot over medium heat.
- Add veggies and season with salt and pepper. (If you have it on hand, add 1 tsp dried thyme and two bay leaves. But, if you don’t have this on hand the soup will still be delicious!)
- Sauté veggies for about 5 minutes until they’re starting to get tender.
- Add chicken and stock to the pot.
- Increase heat to high and bring to a boil.
- Once boiling, add egg noodles and cook for another 8-10 minutes until noodles are tender.
- Add more salt and pepper, if necessary.
- Serve with bread.
