I have mentioned before that my family is not the easiest family to make breakfast for, the main reason being that Steve, Nicole and Alex don’t eat eggs. That rules out so many yummy breakfast and brunch choices, so I’m always on the look out for ideas that don’t involve eggs.
These brunch paninis fit the bill perfectly! They’re a snap to make and after they’re toasted the cream cheese is warm and creamy and the flavor of the strawberries comes bursting through. To make these over-the-top good, I served them with strawberry syrup for dipping.
If you don’t have a panini maker, you could butter the bread and grill the sandwiches in a skillet and you really could use any fruit that you like. I’m sure raspberries or blueberries would be equally delicious! The recipe was inspired by a post on Once a Month Mom.
Strawberry and Cheese Brunch Paninis
- 4 oz light cream cheese, softened
- 1 tbsp agave nectar (or honey)
- 4 large strawberries
- 8 slices crusty white bread
- strawberry syrup, for dipping
Combine cream cheese and agave nectar until smooth and creamy.
Chop strawberries and fold into cream cheese mixture.
Spread mixture onto 4 slices of bread, topping with the other 4 slices.
Place in a panini maker and cook until golden brown.
Serve immediately with strawberry syrup for dipping. (Look at that creamy, cheesy goodness!)
