South of the Border Sausage and Black Bean Soup

I have been shopping at Trader Joe’s for a long time, but recently I hadn’t been shopping there very often.  I’m lucky enough to have quite a few grocery stores nearby, so I’d been doing my shopping at other stores.  Then last week, I went back to Trader Joe’s for the first time in quite a while and I was reminded why I like the store so much.  They have so many interesting products and, for the most part, they’re very affordable.

Yesterday, I was back at Trader Joe’s to pick up a few things and I ended up walking out of there with three bags of groceries.  I couldn’t help myself!  One of the things I came home with was ingredients for a simple soup.  I hadn’t been sure what I wanted to make for dinner, so I was walking around the store looking for inspiration.

Once I saw the carton of black bean soup, I had my inspiration.  The soup is a puree and so it’s the perfect base for making your own soup.  It’s got a fantastic combination of spices with just  a little bit of heat, so I didn’t even need to add any additional seasoning.  To make this soup my own, I added some chicken sausage, a lot of veggies and some black beans.  It was so quick and simple to make and the flavor was amazing.

You can further customize this soup and add whatever flavor of chicken sausage that you like and change up the veggies.  I think carrots, zucchini and/or potatoes would also be delicious in this.  Really you could use whatever veggies you have on hand.  If you don’t happen to have a Trader Joe’s nearby, look for a carton of pureed black bean soup near the cartons of  stock.  I know that Pacific brand also has similar black bean soup.

Ingredients

  • 2 tbsp olive oil
  • 1 (12 oz) pkg Trader Joe's chicken sausage with jalapenos (any chicken sausage will work, just make sure it's fully cooked)
  • 1 medium onion, chopped
  • 1 red bell pepper, chopped
  • 2 stalks celery, chopped
  • 1 cup corn (I had leftover grilled corn that I used, but frozen will work fine)
  • 1 (15 oz) can fire roasted tomatoes with green chiles
  • 2 (15 oz) cans black beans, drained and rinsed
  • 2 (32 oz) cartons Trader Joe's black bean soup
  • juice of 1 lime
  • serve with chopped avocado, shredded cheese and/or sour cream, if desired

Instructions

  • Heat olive oil over medium heat in a large soup pot.
  • Add sausage and and saute until it starts to brown.
  • Add onion, bell pepper and celery, continue sauteing until onion is translucent, about 5 minutes.
  • Stir in corn, tomatoes and black beans.
  • Stir in both cartons of soup and bring to a bubble.
  • Reduce heat and simmer covered for 15 minutes.
  • Stir in lime juice right before serving.
  • Serve with desired toppings.
