Let’s Go Outside of the (Cake) Box

I love to go “outside the box” with cake mixes. I’ve made quite a few desserts that start with a cake mix like Lemon BarsChocolate Banana Snack Cake and Chocolate Cherry Cobbler that end up tasting nothing like a cake from a box….or even a cake at all. All of these recipes take just a few simple ingredients and take almost no effort to make.

Pumpkin Dump Cake

This Pumpkin Dump Cake is no exception. You mix a couple of things together and literally dump it into a cake pan, pop it in the oven and out comes a wonderfully delicious fall dessert.

I found this recipe when I was out on Pinterest. The Country Cook made a version of this and it looked so delicious, I just had to try it. Make sure you pop over to her page and check out her version.

After I made this, I was not disappointed. It’s so delicious! It’s a little crunchy on the top and the pumpkin layer is nice and creamy.

If you’re not into making pies or you just don’t have time to bake a pie, this dessert would be a perfect alternative for your Thanksgiving dessert.

Ingredients Needed to Make Pumpkin Dump Cake

  • Canned pumpkin puree – Make sure you’re using pumpkin puree rather than canned pumpkin pie filling.
  • Sweetened condensed milk
  • Eggs – This recipe has been tested using large eggs.
  • Pumpkin pie spice – You can find this spice blend in the spice aisle. It’s a mixture of cinnamon, ginger, lemon peel, nutmeg, cloves and cardamom. I usually buy mine from Trader Joe’s.
  • White cake mix – If you don’t have one on hand, a yellow cake mix can be substituted.
  • Butter

How to Make Pumpkin Dump Cake

  • Preheat oven to 350 degrees.
  • Whisk together pumpkin puree, sweetened condensed milk, eggs and 1 tsp pumpkin pie spice.
  • Pour mixture into a 9×13 inch baking dish that’s been coated with cooking spray or butter.
  • Sprinkle cake mix evenly over the top of the pumpkin mixture.
  • Whisk remaining teaspoon of pumpkin pie spice into the melted butter.
  • Pour butter evenly over the top of the cake mix.
  • Bake in preheated oven for 55-60 minutes.
  • Cool for at least 30 minutes before serving and refrigerate any leftovers.

Ingredients

  • 1 (15 oz) can pumpkin puree
  • 1 (14 oz) can sweetened condensed milk
  • 3 eggs
  • 2 tsp pumpkin pie spice, divided
  • 1 white cake mix
  • 1 cup butter, melted

Instructions

  1. Preheat oven to 350 degrees.
  2. Whisk together pumpkin puree, sweetened condensed milk, eggs and 1 tsp pumpkin pie spice.
  3. Pour mixture into a 9×13 inch baking dish that’s been coated with cooking spray or butter.
  4. Sprinkle cake mix evenly over the top of the pumpkin mixture.
  5. Whisk remaining teaspoon of pumpkin pie spice into the melted butter.
  6. Pour butter evenly over the top of the cake mix.
  7. Bake in preheated oven for 55-60 minutes.
  8. The cake will still be jiggly in the middle, but will firm up as it cools.
  9. Cool for at least 30 minutes before serving and refrigerate any leftovers.
