As I’ve gotten to a certain age, I’ve realized that I can’t take my health and fitness for granted. If I want to stay healthy and feeling young, I have to get to the gym on a regular basis AND I need to try and eat a healthy diet. As much as I love a good burger and fries, that’s not a meal I should eat all that often. I try and cook healthful meals at home and part of that is making sure that I’m cooking with quality ingredients.

If that wasn’t enough to convince you to run out to your local Sam’s Club to purchase a package of NatureRaised Farms chicken from the freezer section, let’s talk about the convenience. I love having this product in my freezer, ready to use anytime I want to whip up a quick chicken dish. The chicken breasts are individually frozen, so you can easily grab just as much as you need.
Now let’s talk about this quick Greek Chicken Saute. A quick marinade with lemon juice, olive oil and Greek seasoning makes the chicken sing with bright flavors. Add to that a mix of veggies, a little feta cheese and some salty, briny Kalamata olives and you’ve got a winner chicken dish. What further helps to keep this dish healthy is tossing it with zucchini “noodles” rather than pasta or rice. This just further boosts the nutrition of this dish and I promise you won’t miss the pasta or rice!
Greek Chicken Saute
- 3 NatureRaised Farms boneless skinless chicken breast portions, thawed
- juice of 2 lemons
- 3 cloves garlic, grated
- 1/4 cup olive oil
- 1 tbsp Greek seasoning
- 1 red bell pepper, chopped
- 1 cup fresh green beans, cut into thirds (about 1″-1 1/2″ long)
- 3 roma tomatoes, chopped
- 1/3 cup feta cheese
- 1/4 cup Kalamata olives, chopped
- 3 medium zucchini, spiralized, shredded or shaved into ribbons
Cut chicken into bite size chunks.
Whisk together lemon juice and grated garlic in a shallow dish
Slowly whisk in olive oil, until well combined.
Stir in Greek Seasoning.
Add chicken pieces to the dish, tossing to coat in the marinade.
Cover dish with plastic, refrigerate and marinate for about 30 minutes.
Heat a large skillet over medium high heat (a cast iron skillet works great for this, if you have one).
Add chicken and marinade to preheated skillet.
Saute for about 5 minutes, until chicken has browned.
Reduce heat to medium, add bell pepper and green beans to skillet and continue sauteing for another 2 minutes, stirring frequently.
Add tomatoes to mixture and cook until tomatoes start to break down and give off their juices, about 5 minutes.
Stir in feta and olives, cooking for about another minute to allow the cheese to melt.
Turn off heat, add zucchini, tossing to coat with the sauce.
Serve immediately.
