Instant Pot Minestrone Soup is So Filling and Satifying
I love soup all year long, but I especially love it during the winter months. I mean, what’s not to love, it’s warm and comforting and is perfect for lunch or a nice light dinner. Serve it with a salad and some warm bread and you have a wonderfully healthy meal!
This Minestrone is fast becoming my new favorite soup. It’s loaded with veggies and only has a small amount of meat. Just a little pancetta or bacon to add some extra flavor.
Even though it’s light on meat, it’s still filling and satisfying. The addition of cannellini beans and a little bit of pasta make it nice and hearty. Just what you need on a cold winter night.
Minestrone Soup is Great as a Leftover
To make this minestrone, I like to use a mixture of chicken and beef stock. The combination adds a perfect depth to the flavor.
This recipe turns out a HUGE pot of delicious soup plenty for dinner, plus leftovers for lunch. We all know that soup only gets better the next day!
Make It Easy With The Instant Pot
Now, let’s talk about the Instant Pot. That’s what makes this soup perfect for a busy weeknight.
After prepping the ingredients, the pancetta or bacon gets sautéed right in the Instant Pot. Then, you add the veggies and the stock and let the Instant Pot do its thing. To help the prep go even quicker, I like to buy pre-shredded cabbage.
While the soup is cooking, you cook the pasta. I find that it works best to cook it separately from the soup and only boil it for about 8 minutes. This helps to keep the pasta from becoming mushy when you add it to the soup.
Once the steam is released from the Instant Pot, stir in the beans and the pasta and dinner is ready.

Easy Instant Pot Minestrone
Minestrone is a nutritious soup that's filled with veggies and since it's made in the Instant Pot, you can enjoy it any night of the week.
Ingredients
- 4 oz pancetta or bacon, chopped
- 1 tbsp olive oil
- 1 medium onion, chopped
- 2 medium carrots, chopped
- 4 ribs celery, chopped
- 1 red pepper, chopped
- 2 cups green cabbage, shredded
- 4 cloves garlic, finely chopped
- 1 tsp Italian seasoning
- 4 Roma tomatoes, seeded and chopped
- 1 quart chicken stock
- 1 quart beef stock
- 1 tsp salt
- 1/2 tsp pepper
- 1 – 11 oz can cannellini beans
- 1/2 cup elbow macaroni, cooked for 8 minutes
- Parmesan cheese for serving
Instructions
- Heat olive oil in the Instant Pot on the saute function, add pancetta or bacon and saute for about 10 minutes, until crsipy.
- Add onions, carrots, celery, peppers, cabbage and garlic.
- Add tomatoes, beef and chicken stock.
- Stir in the Italian seasoning and the salt and pepper.
- Put the lid on the Instant pot, select the soup function and set for 30 minutes.
- While soup is cooking, cook the pasta for 8 minutes.
- Once soup is cooked, quick release the steam.
- After the steam has released, stir in the beans and the pasta.
- Serve with parmesan cheese.
