Do you ever have those days where you know you want something really good for dinner, but you just don’t feel like spending a lot of time in the kitchen and you know you shouldn’t go out to eat? That seems to happen to me a lot and that’s exactly how these chicken satay skewers with stir fried veggies were born.
I know they sound like they might be time consuming or complicated to make, but trust me, they’re SO easy. So easy, in fact, that you can have this meal on the table in no time any day of the week.
The secret to making these so easy is to take some help from the grocery store. I used a store bought satay peanut sauce and I bought a package of pre-chopped stir fry veggies from the produce department. The only thing I actually had to make from scratch was a super simple marinade for the chicken.
I made the chicken satay skewers with boneless chicken breasts that I cut into strips, but you could make this even easier and use chicken tenders. Once I had the chicken cut into strips, I threw it into a ziplock bag along with my quick marinade. I did this earlier in the day so the chicken would have longer to marinade, but you can let it marinade for as little as 15 minutes and it will still soak up some delicious flavor.
I had my husband, Steve, grill everything on the charcoal grill. If you don’t have time for that, this meal would be just as delicious cooked indoors. You can cook the chicken on a grill pan and stir fry the veggies in a wok or a large skillet. No matter what, you’ll have a delicious meal on the table in no time!
Chicken Satay Skewers with Stir Fried Veggies
Ingredients
- juice of 1 lime
- 1 clove garlic, grated
- 1 tbsp ginger paste
- 1 tbsp lite soy sauce
- 1 tbsp sesame oil
- 1/4 cup plus 2 tbsp avocado oil, divided
- 4 boneless skinless chicken breasts
- wooden skewers
- 1-2 packages fresh pre-cut stir fry veggies
- Store bought satay peanut sauce, such as Trader Joe's brand
- salt and pepper

Prep time includes marinating time.
You can use olive oil instead of avocado oil, if you prefer.
To make this indoors, cook the chicken on a grill back as directed. For the veggies, heat the 2 tbsp oil in a wok or large skillet over high heat (rather than tossing with the veggies) and stir fry until crisp tender.
