Local Restaurants are Great Inspiration
The inspiration for today’s recipe comes from a restaurant that is one of my family’s favorites. The restaurant is called Bonfire and it is a smaller, local chain here in Minnesota.
Before we moved across town, we used to eat there all the time. In our new location, we’re not close to any of their locations, so it’s now an occasional treat.
We have always loved the variety on their menu. You can always find whatever you happen to be in the mood for.
Chicken Lettuce Wraps are One of Our Favorites
One of mine and my husband’s favorite things on the menu is the chicken lettuce wraps. They taste really good and it always feels like a healthy choice because it’s mainly protein and veggies with a little dairy from the sour cream.
So after much “research” eating them at the restaurant, I started experimenting at home and came up with my own tasty homemade version. These Quick Lamb Samosa Lettuce Wraps were also inspired by another favorite restaurant of ours.
Chicken Lettuce Wraps are Easy to Make
The chicken mixture is super easy to put together. It’s simply ground chicken, water chestnuts, garlic and a really simple sauce.
Then, to top the chicken I make a lime and cilantro flavored sour cream and a homemade pico de gallo. If you don’t have time to make your own, you can use store bought pico de gallo and this will really come together quickly.
Chicken Lettuce Wraps
A tasty ground chicken mixture combines with fresh pico de gallo, a zesty lime sour cream sauce and crunchy iceberg lettuce to create these healthy and delicious chicken lettuce wraps.
Ingredients
For chicken:
- 1/3 cup low sodium soy sauce
- 2 tbsp honey
- juice of 2 limes
- 4 cloves garlic, minced
- 1 tbsp olive oil
- 2 tsp cornstarch
- 2 lbs ground chicken
- 2 cans diced water chestnuts
- black pepper
- 1 head iceberg lettuce, core removed and cut into quarters
For sour cream:
- 8 oz sour cream
- juice of 1 lime
- 1/4 cup cilantro, finely chopped
For pico de gallo:
- 4 roma tomatoes, seeded and chopped
- 1/2 jalapeno pepper, seeded and finely chopped
- 1/4 of a red onion, finely chopped
- 1/3 cup cilantro, chopped
- zest and juice of 1 lime
- 1/2 tsp salt
- 1/2 tsp pepper
Instructions
To Prepare Chicken:
- Whisk together soy sauce, agave, lime juice, pepper and cornstarch in a small bowl.
- Set aside.
- Heat oil in a large skillet over medium high heat.
- Add chicken and break up with a spoon.
- Cook until no longer pink.
- Add garlic and saute for 1 minute.
- Stir in water chestnuts and sauce.
- Reduce heat and let mixture simmer while you prepare sour cream and pico de gallo.
To Prepare Sour Cream:
- In a small bowl, mix sour cream with cilantro and lime juice, stirring until well combined.
To Prepare Pico de Gallo:
- In a medium bowl, combine tomatoes, red onion, jalapeno, cilantro, lime zest and juice, salt and pepper.
To Serve:
- Serve chicken and toppings on lettuce leaves.
