Alex’s Graduation!

Last night was a big night for our family, my youngest, Alex, graduated from high school! We’re so proud of him and wish him all the best as he starts this next chapter of his life. In the fall he plans on pursuing a degree in actuarial science at The University of St Thomas. (He definitely does not get his math skills from me!)
Saturday is party day, when will celebrate his accomplishment with our family and friends. As you may know, I’ve been spending the past several weeks getting ready for the party.
We’re almost there, this week we’ve been shopping for soda and all of the last minute groceries. I also baked the last of the sandwich rolls for the pulled pork sandwiches this week. All of the pork has been pulled and frozen and now is starting to thaw in the fridge.
Today I’ll make the dressing for the coleslaw.
Then tomorrow all of the fruit gets cut up and I’ll bake the Lemon Bars and the Chocolate Caramel Crunch Cookie Bars.
Once all of that is done and everything is set up, we’ll be ready to celebrate!

So far all two of the three grad parties I attended this summer had pulled pork..wanted to do something different…what do you think about buying fried chicken from a local deli, and making your pesto salad, minus the chicken? Would I make it any differently as far as amounts of ingredients? Also, how much does your recipe make?
Patricia – I think fried chicken sounds delicious (and easy!) and the pesto pasta would be great with that. As far as making the pesto pasta without the chicken, you would make it exactly the same, minus the chicken. My recipe, using 1 box of pasta, makes about 6 fairly large main dish servings. So as a side dish I would figure each box of pasta would serve about 12-14 people. Good luck with your party!
