Now that Alex’s grad party is behind me, I can once again focus on creating new dishes and writing more blog posts….YAY!  I have all kinds of ideas that will be coming up, but I wanted to start with this grilled shrimp recipe.  First of all, let me just say…it.is.so.GOOD!!  Second of all, it is incredibly quick to prepare.  In fact, it was so quick that I barely had time to take pictures!

The combination of Old Bay, butter and shrimp is absolutely amazing and the orzo is simple but has amazing garlic and cheese flavor.  When you put the shrimp and the orzo together, it’s a total flavor party in your mouth!  (I’m actually thinking about eating the leftovers for breakfast right now ;) )

Since this cooks up so fast, I would suggest that you get the shrimp skewers ready and the ingredients for the orzo prepped before you start any cooking.  Once the orzo has been cooking for a few minutes, I would put the shrimp on the grill.  Make sure you watch the shrimp closely, it cooks very quickly!

Grilled Shrimp with Garlicky Parmesan Orzo

For the shrimp:

  • 1 lb large shrimp, peeled and deveined
  • 3 tbsp butter
  • 2 tsp Old Bay seasoning

For the orzo:

  • 1/2 lb orzo
  • 2 tbsp butter
  • 2 cloves garlic, minced
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1/2 cup grated parmesan cheese
  • 2 tbsp fresh parsley, chopped
Thread shrimp onto 4 skewers.

Place 3 tbsp butter in a microwave safe dish.  Melt butter in the microwave.  Stir in Old Bay seasoning.

Brush melted butter mixture onto both sides of shrimp skewers.

Heat grill to medium high heat.

Grill shrimp for about 2 to 3 minutes per side until cooked through.

Meanwhile, cook orzo according to package directions.

While orzo is cooking, put 2 tbsp butter, garlic, salt and pepper in a microwave safe dish.  Melt in the microwave.

Drain cooked pasta and toss with butter mixture, parmesan and parsley.

Serve shrimp over the orzo.
