Yesterday while I was looking for another old recipe, I went through my old recipe box, which I hadn’t touched in quite a long time. In fact, I had a hard time even finding it. But when I found it, it was like a little walk down memory lane. Years ago at my wedding shower, everyone brought a recipe card with their favorite recipe for me and this box was full of all of those. I had forgotten about many of the recipes and it brought back a lot of memories.
One of the recipes was for this Mud Cake. As soon as I saw it, I remembered it, but what I didn’t remember was how easy it was to make. I think it is probably the easiest scratch made cake you’ll ever make. I don’t remember who the recipe is from, but I had to laugh at it. It was a little sketchy, it listed all of the ingredients, but almost no instructions on how to make it. This is the actual recipe card:
Not a lot of instruction, right? Thankfully, there wasn’t much to figure out and it turned out great. We had it for dessert last night and I was very surprised that Steve remembered me making this cake years ago. He said it tasted just like he remembered!
Mud Cake
For cake:
- 3 cups flour
- 2 tsp baking soda
- 1 tsp salt
- 1/3 cup cocoa powder
- 2 cups cold water
- 2 cups sugar
- 1 tsp vanilla
- 2 tbsp white vinegar
- 3/4 cup vegetable oil
For frosting:
- 1 1/2 cup sugar
- 3 heaping tbsp cocoa powder
- enough milk to moisten (I was out of white milk, so I used chocolate milk)
- 1 tsp vanilla
- 1/2 cup butter, cut into chunks
Preheat oven to 350 degrees. Coat a 9×13 pan with cooking spray. Combine all of the cake ingredients in a large mixing bowl. Whisk together until smooth. Pour into prepared pan.
Bake in preheated oven for 40 minutes. Allow to cool slightly before frosting.
While cake is cooling, prepare frosting. In a medium saucepan, combine sugar and cocoa and add milk about 1 tbsp at a time until mixture is just moistened. Bring to a boil over medium-high heat and boil for 1 minute, stirring constantly.
Turn heat off and add vanilla and butter. Continue stirring until butter is melted and frosting has thickened. This will take several minutes. Pour frosting over cake and spread evenly.
Allow cake to cool long enough to let the frosting set up before serving.

Lisa, This is the same as a recipe from my Mom that I have been making for years!! I LOVE the fudgey frosting and whenever I am desiring that fudgey flavor, I make this cake.
