Impress your sweetie this year with a romantic Valentine’s Day dinner for two that’s easy to prepare, delicious AND on the healthy side.
I love going out to eat, but it’s not very often that my husband and I go out to eat on Valentine’s Day. You have to plan so far in advance to make sure you get a reservation and we don’t tend to be people that plan ahead like that. It’s just not how we roll. Most often on Valentine’s Day we stay home and make a special meal. It’s much more relaxing, you don’t have to worry about crowds or parking and it’s a lot more affordable.
The Valentine’s Day dinner for two I’m planning this year is simple to make and definitely affordable. It’s also on the healthier side, which mean’s you don’t have to feel guilty about indulging in a 4 course dinner. Much of the meal can be prepped or made ahead of time, so you and your sweetie will have plenty of time to relax and enjoy each other’s company.
Start your evening off with a Cranberry Vodka Spritzer . This cocktail can be prepped a couple days ahead of time, which means it will only take minutes to mix up two of these light and refreshing drinks.
While you’re sipping your cocktails, you can nibble on these delicious, sweet and savory Bacon Wrapped Goat Cheese Stuffed Dates. They can be prepped ahead of time and baked right before you’re ready to start your evening. They’re the perfect small bite to start your meal with.
Next up is a classic Steakhouse Wedge Salad with a Twist. It’s a delicious, refreshing salad that makes a great presentation. The ingredients for this can be prepped earlier in the day or even the day before. When you’re ready to eat, all you need to do is quickly assemble the salad.
For the main event, I have this delicious Skinny Fettuccine Alfredo. It may be skinny, but let me tell you, it’s not lacking in flavor at all. It’s also really quick and easy. The whole dish comes together in about the amount of time it takes to make the pasta. This is a meatless dish, but you could easily add cooked chicken or shrimp, which would also be delicious.
Finally, every Valentine’s Day dinner for two needs something chocolate to finish off the evening. And what better way than with a decadent Chocolate Bundt Cake with Hot Fudge. This cake actually is relatively light, but it’s full of rich chocolate flavor and the hot fudge takes it over the top. You can also make this ahead of time. Just make sure you store cake in an airtight container and refrigerate the hot fudge sauce. When you’re ready to serve, slice the cake, reheat the hot fudge and dessert is ready.
