Grilled Curried Chicken

If you love the flavor of curry, you will love this chicken.  This recipe will transform your ordinary boneless chicken breasts into something really special.  After soaking in a simple marinade for several hours, you have chicken that is absolutely bursting with flavor.  The flavor of the curry really stands out as well as a nice tangy note from the lemon.  Add the smoky flavor from the grill and you’ve got a winner chicken dish that’s super easy!

Grilled Curried Chicken

  • 4 boneless skinless chicken breasts
  • 6 oz Greek yogurt
  • juice and zest of 1 lemon
  • 2 cloves garlic, grated or finely minced
  • 1 1/2 tsp curry powder
  • 1/4 tsp salt

In a mixing bowl, whisk together yogurt, lemon juice and zest, garlic, curry powder and salt.

Add chicken, coating well.  Refrigerate and let marinate for several hours or overnight.

Preheat grill to medium high heat.  Grill chicken about 8-10 minutes per side, until cooked through.

Serve immediately.
