Do you love potato salad as much as I do?  It’s a perfect salad for summertime.  No summer potluck is complete without it, IMO.

If you’re a potato salad lover and you’re watching your carbs, you are sure to love cauliflower dill no potato salad.  It is rich and flavorful, but low carb because we’ve got cauliflower standing in for those potatoes.

Cauliflower is a great stand in for potatoes.  The texture is similar and the flavor is mild.  Once everything is put together you don’t even miss the potatoes.

Now,  let’s talk about the dressing.  It’s creamy, tangy and fresh dill sends the flavor over the top.  I’ve had some potato salad that’s just tossed with mayo, but I feel like the potato salad ends up tasting very bland.  It needs more than than.

Cauliflower Dill No Potato Salad

My cauliflower dill no potato salad is in no way bland tasting.  It gets its delicious, tangy flavor from the addition of yellow mustard and apple cider vinegar.  Then a generous amount of fresh dill further enhances the flavor.

Cauliflower Dill No Potato Salad

Cauliflower Dill No Potato Salad is creamy and flavorful, just like traditional potato salad, but without all of the carbs. It's a perfect side for any summer gathering.

Total Time 30 minutes

Ingredients

  • 2 (12 oz) pkgs. cauliflower florets, about 4 heaping cups
  • 2 eggs, hard boiled and chopped (see notes)
  • 2 ribs celery, chopped into a small dice
  • 1/4 small red onion, finely chopped
  • 1/4 cup mayonnaise
  • 1 tbsp yellow mustard
  • 1 tbsp apple cider vinegar
  • 2 tbsp fresh dill, minced
  • 1/2 tsp salt
  • 1/2 tsp pepper

Instructions

  • Steam cauliflower in the microwave for 4-5 minutes, until tender.
  • Chill in the refrigerator.
  • While cauliflower chills, whisk together mayo, mustard, apple cider vinegar, dill, salt and pepper.
  • Set aside.
  • Cut cauliflower into bite size pieces.
  • Combine cauliflower, eggs, celery and onion in a large bowl.
  • Pour dressing over mixture.
  • Gently stir to coat all ingredients with the dressing.
  • Notes

    To boil eggs, cover eggs with water in a small sauce pan. Bring water to a boil. Remove pan from heat, cover and let sit for 13 minutes. Pour hot water off and cover eggs with cold water and let sit for 20 minutes.
