Red Velvet is Such a Great Flavor
My husband and I love pretty much anything red velvet. One of our favorite restaurants used to have this gigantic classic red velvet cake with cream cheese frosting and they served it with black cherry ice cream. Frankly, it was big enough for my entire family to share and that red velvet taste was so, so good.
Sadly, they no longer have that tasty, simple dessert on the menu anymore. So, it was time to start looking for something fun to bake to replace one of our favorite desserts.
As I had been on a bit of a cookie run at the time, I thought a red velvet cookie recipe would be something fun to make. However, cookie recipes can be a bit of a science experiment for me.
Baking tends to be a bit more precise than cooking. I can get away with a “pinch of this” or a “scoop of that” when I’m cooking. But, baking is a more precise science where sometimes I have a little less patience for than cooking!
Also, regular cookie recipes can have a long list of ingredients. Flour, sugar, vanilla extract, brown sugar, eggs – the list keeps growing.
Now, don’t get me wrong, I love a good cookie recipe when I do have the patience to bake. Try these White Chocolate Chip Cookies with Candy Canes, for example. Well worth the time and effort!
But, I was now looking at how to make an easy red velvet cookie recipe. As in how to best mix a few simple ingredients together, yet still have that delicious red velvet flavor. One of the best ways to do this?
Cake mix cookies.

A cake mix cookie tends to be easier to make and use less ingredients. All the dry ingredients you need are already mixed together in the box of cake mix. You just need to add a couple of wet ingredients to complete the cookies you want to make.
Concerned about the texture of an easy recipe that only has a few simple ingredients and a box of cake mix? No worries. These turn out with a delightfully soft, yet chewy texture.
So, if I wanted easy red velvet cookies, then red velvet cake mix cookies was the way to go. A delicious cookie that’s easy to pull together and still has that delicious red velvet flavor.
Pulling Together a Red Velvet Cake Mix Cookie Recipe
The first thing was to find a red velvet dry cake mix. The best part is you can find these in your local grocery stores all year long. The only other things you really need are eggs and vegetable oil.
You could literally stop right there and have a pretty tasty red velvet cookies recipe. But, why stop there!?
Being that red velvet cake mix is basically white cake with a touch of cocoa powder and some red food coloring, it allows you to add other items to dress it up. You could give it a more chocolate flavor by adding dark chocolate chips. You could also put in peanuts, walnuts or macadamia nuts for a little more savory cookie.
For my red velvet cookie recipe, I wanted to add in some white chocolate chips. I really like the flavor and I love the color contrast between the red cookie itself and the lightness of the white chocolate chips.
What Time of Year is Best for Baking Red Velvet Cookies
Anytime time of year, of course, and that’s the best part! However, due to their festive red color, they are a great Christmas cookie recipe. And, they add a beautiful pop of color if you participate in holiday cookie exchanges.
These red velvet cake cookies are also a perfect compliment to any Valentine’s Day celebrations you may have. This red cookie definitely fits in with the red theme of Valentine’s Day, plus it’s just a really delicious cookie!
These are going to be some of the easiest cookies you will ever make and if you are a red velvet fan, something you will really enjoy!
Tips and Tricks
- For best results, line your baking sheet with parchment paper. This will prevent the cookies from sticking as well as make clean up easy.
- If you want a stronger chocolate flavor, you can substitute semi-sweet or milk chocolate chips for the white chocolate chips.
- Cooling the cookies on a wire rack will allow them to cool down faster, as well as help to retain a crispy bottom.

How to Make Red Velvet Cookies
- Preheat oven to 350 degrees.
- Combine red velvet cake mix, eggs and vegetable oil in a mixing bowl.
- Stir until well combined.
- Add white chocolate chips and mix until well incorporated.
- Line 2 baking sheets with parchment paper or coat with cooking spray.
- With a small cookie scoop or two teaspoons, drop cookie dough onto each baking sheet.
- Bake for 10-12 minutes.
- Let baked cookies cool on each baking sheet for a couple of minutes and then transfer to a wire rack to cool completely.
