I think it’s fun to have a special cocktail to serve your guests on Thanksgiving, it just helps to set a festive tone.  This cranberry vodka spritzer is the perfect drink for that.  It’s really fresh tasting and the color is stunning!  It’s also perfect because it would taste just as great without the vodka, so teetotalers and kids can have a festive drink as well.

The recipe as written will make about 4 cocktails, but you could easily puree enough cranberries for a crowd.  For about each 1 1/2 cups of cranberries that you add, add 2 more tablespoons of honey and 1/4 cup of water.

 

Cranberry Vodka Spritzer

  • about 1 1/2 cups fresh cranberries
  • 2 tbsp honey
  • 1 1/2 oz vodka, per drink
  • fresh lime, cut into wedges
  • club soda
  • ice

Put about 1 1/2 cups of cranberries in a blender.  Add 2 tbsp honey and about 1/4 cup water.

Blend until a puree forms, adding more water if necessary.  Pour into a bowl.

For each cocktail, add ice to a cocktail glass, then add 1 1/2 oz vodka and two tbsp cranberry puree.  Top off with club soda and squeeze a lime wedge into glass.  Stir gently to combine.
