I’m almost embarrassed by how easy this recipe is. Almost….because, really, summer eating should be all about easy food. Am I right?
We all want to eat delicious food, but who wants to spend all kinds of time in the kitchen when it’s warm and sunny outside? Not me.
This watermelon mint salad actually has two levels of easy. There’s pretty easy, where you cut up your own watermelon and you take a few minutes to reduce some balsamic vinegar on the stovetop and then there’s the approach I took.
I spent a few extra dollars at the grocery store to make this recipe ridiculously easy. I bought already cut up watermelon, as well as a balsamic glaze.
My salad was ready in under 5 minutes. That makes this the perfect salad if you need something last minute if, say, your neighbor invites you over for an impromptu barbecue.
If you want to save a few bucks, don’t worry, it’s still a quick and easy salad. It won’t take you too long to cut up your own watermelon and balsamic glaze is not difficult to make.
For the balsamic glaze you just heat about 1/2 cup of balsamic vinegar, along with a couple teaspoons of sugar in saucepan and cook it until it’s reduced to a syrup. Still super easy!
So I think I’ve established that this is super simple, but how does it taste? Well, if you ask me, I’d say pretty darn amazing.
It’s refreshing and light. The combination of watermelon, mint, balsamic and parmesan is truly out of this world. It’s a perfect summer side dish that will go with just about anything.
Watermelon Mint Salad
Watermelon mint salad is a refreshing and delicious summer side dish that can be ready in just 5 minutes.
Ingredients
- 4 cups cubed watermelon
- 3 tbsp fresh mint, chopped
- 1/4 cup shaved parmesan cheese
- 3 tbsp balsamic glaze
Instructions
Combine watermelon, mint and parmesan in a serving bowl.
Drizzle with balsamic glaze.
Serve immediately.
Notes
I have found balsamic glaze at Trader Joe's, as well as Whole Foods.
If you can't find balsamic glaze you can make your own.
Pour 1/2 cup balsamic vinegar into a small saucepan.
Cook over medium low heat, stirring occasionally, until reduced to a syrupy consistency.
