Cilantro Mayonnaise is a zippy condiment that combines the bright flavor of cilantro, the tartness of fresh lime along with the creaminess of mayo. A perfect dip for veggies or a condiment for sandwiches.
Sometime I find recipes in rather unusual places. But, hey, if it sounds good, who cares where it came from. I happened upon this recipe in the “South Beach Diet” book.
I love flavored mayonnaise and this one sounded so delicious with the combination of lime and cilantro. I just had to give it a try. I also love this easy Truffle Aioli. I think it would be fun to serve both of these with fresh veggies or even french fries.
It turned out to be so flavorful and good! What I also love is that the lime juice thins the mayo out a little bit, so not only is it perfect for spreading on a sandwich, it’s also the perfect consistency for dipping veggies in.
Oh…and did I mention it takes about 2 minutes to make? So if you happen to have a spare 2 minutes, give this a try and dress up your next sandwich!
Tips and Tricks
- A handheld immersion blender can be used in place of a regular blender
- If you’re not a fan of cilantro, fresh flat leaf parsley can be substituted and will still give the mayo a nice bright flavor.
- Store in an airtight container in the refrigerator for up to two weeks.

- 3/4 cup light mayonaise
- 3/4 cup cilantro
- 1 tsp reduced sodium soy sauce
- juice of half a lime

- Place all ingredients in a blender or food processor.
- Blend until smooth.
- Spread on sandwiches or use as a dip for veggies.
