Buffalo Chicken Wraps – Dinner in a Snap

I have a confession to make. During the summer I often find myself coming up completely dry when it’s time to come up with ideas for dinner. I would much rather just go to one of our favorite restaurants, sit on their patio, enjoy the summer weather and let someone else do all of the work.

Well, I know that’s not a good idea to do all of the time. It gets expensive, and I know we eat better at home. So, I have to limit how much we go out and I have to try and get my creative juices flowing in my own kitchen!

So, of course, yesterday I was struggling with what to make for dinner. Nothing sounded good.

But, while Kelly and I were out for a walk we started talking about food (crazy, I know). She was telling me about these chicken buffalo wraps that they have for dinner at their sorority. I thought they sounded really good and I also thought that would be a really quick and easy thing to make for dinner.

So, I started thinking about how I would like to make my own buffalo chicken wraps and realized I already had almost everything I needed. I just had to make a really quick trip to the store for a couple of ingredients.

I used some shredded chicken that I already had on hand in the freezer, and for the sauce I stirred some buffalo sauce into ranch dressing. For some crunch, I chopped up some celery and for a little extra nutrition, I layered in some fresh spinach. Of course, I added some cheese and then I grilled the wraps (inside on a grill pan) to melt the cheese and to crisp up the flatbread.

These wraps were quick, easy and delicious. Perfect for a weeknight dinner or lunch!

Buffalo Chicken Wraps

Ingredients Needed for Buffalo Chicken Wraps

  • 1/3 cup ranch dressing (I used light)
  • 1 to 2 tbsp buffalo sauce, depending on how much heat you want
  • 2 cups shredded cooked chicken
  • 1 rib celery
  • 1/2 cup shredded cheddar cheese
  • pepper, to taste
  • fresh baby spinach
  • 4 of your favorite wraps (I used flatbread, but flour tortillas would work great, too)
Combine ranch dressing with desired amount of buffalo sauce.
Chop celery and combine with chicken and cheese in a medium size bowl.
Add Buffalo mixture and stir until well combined.
Put a layer of spinach down the middle of each wrap, then divide chicken mixture between the 4 wraps.
Roll up the wraps. Grill over medium heat on a grill pan or on the outdoor grill until crispy and cheese is melted.
Serve hot.
