Short ribs are often a favorite of mine to order when I’m out for dinner, they’re always so tender and flavorful and usually have an equally delicious sauce. But I’d never made them at home before.
Now that has all changed. I was recently at one of my favorite grocery stores and I saw the most gorgeous package of short ribs and I knew it was time to make these myself.
I have to tell you, no one in my house was disappointed. The short ribs couldn’t have been easier to make and they tasted absolutely amazing!
They were perfectly browned, tender and almost falling off the bone. The tomato and red wine sauce that I braised them in gave the dish a deep and rich flavor.
I served the short ribs with fresh spaghetti, which tasted awesome tossed in that rich sauce. These would also go perfectly with some fluffy mashed potatoes.

Italian Style Braised Short Ribs
These flavorful short ribs are a mostly hands off one pot wonder which makes them perfect for entertaining. Just add pasta or mashed potatoes and a salad for a complete meal.
Ingredients
- 4 bone-in short ribs
- 1 tsp salt, divided
- 3/4 tsp pepper, divided
- 1 tbsp olive oil
- 4 cloves garlic, minced
- 1 cup dry red wine
- 2 cans diced tomates
- 1 tbsp herbes de provence
- Cooked pasta or mashed potatoes for serving
Instructions
- Preheat oven to 325 degrees.
- Season short ribs with 1/2 tsp salt and 1/4 tsp pepper.
- Heat olive oil in a dutch oven over medium high heat.
- Sear short ribs for about 2 minutes on each side, until browned.
- Remove from pan and set aside.
- Reduce heat to medium low.
- Add garlic and saute until fragrent, about 30 seconds.
- Add wine to pan and stir to scrap up any browned bits.
- Increase heat to bring wine to a boil and let reduce for about 1 minute.
- Stir in tomatoes and herbes de provence.
- Return short ribs to pan turning to coat in the sauce.
- Bake in preheated oven for 1 1/2 to 2 hours, until short ribs are tender and pulling away from the bone.
- Serve short ribs over pasta or mashed potatoes, along with the sauce.
