Watermelon mint salad is a refreshing and delicious summer side dish that can be ready in just 5 minutes.
I’m almost embarrassed by how easy this recipe is. Almost….because, really, summer eating should be all about easy food. We all want to eat delicious food, but who wants to spend all kinds of time in the kitchen when it’s warm and sunny outside? Not me.
This watermelon mint salad actually has two levels of easy. There’s pretty easy, where you cut up your own watermelon and you take a few minutes to reduce some balsamic vinegar on the stovetop and then there’s the approach I took. I spent a few extra dollars at the grocery store to make this recipe ridiculously easy. I bought already cut up watermelon, as well as a balsamic glaze. My salad was ready in under 5 minutes. That makes this the perfect salad if you need something last minute because, say, your neighbor invites you over for an impromptu barbecue.
So I think I’ve established that this is super simple, but how does it taste? Well, if you ask me, I’d say pretty darn amazing. It’s refreshing and light and the combination of watermelon, mint, balsamic and parmesan is truly out of this world. It’s a perfect summer side dish that will go with just about anything.
- 4 cups cubed watermelon
- 3 tbsp fresh mint, chopped
- ¼ cup shaved parmesan cheese
- 3 tbsp balsamic glaze
- Combine watermelon, mint and parmesan in a serving bowl.
- Drizzle with balsamic glaze.
- Serve immediately.
If you can't find balsamic glaze you can make your own.
Pour ½ cup balsamic vinegar into a small saucepan.
Cook over medium low heat, stirring occasionally, until reduced to a syrupy consistency.
