When I saw this recipe on The Country Cook‘s blog, I knew I had to make it. If you’ve never visited The Country Cook, you really should stop over. She has so many yummy sounding recipes on her blog and they all have step-by-step instructions.
This cheesy chicken tator tot casserole sounded so delicious and I knew my family would love it! It couldn’t have been easier to make, either. There was almost no prep work, just cutting up the chicken and the green onions. Everything gets layered into the slow cooker and then the slow cooker does all of the work. How easy does that sound?
It ended up being a big hit in my house. Even Alex who normally doesn’t go for cheesy potatoes loved it. Steve was out of town, so he didn’t get to try it, but Nicole, Kelly and I also loved it. I will definitely be making this one again!
Cheesy Chicken Tator Tot Casserole
- 32 oz bag tator tots
- 1 lb boneless skinless chicken breasts
- 2 cups shredded sharp cheddar cheese (I used reduced fat)
- 1/2 cup bacon bits
- 3/4 cup milk (I used 1%)
- 3 green onions
- salt and pepper
Cut chicken into bite size pieces and thinly slice green onions.
Layer half of the tator tots in the bottom of a slow cooker.
Top the tator tots with 1/3 of the bacon bits, 1/3 of the cheese and 1/3 of the green onions. Add all of the chicken on top of this and season with salt and pepper. Layer on another 1/3 of the bacon bits, 1/3 of the cheese and 1/3 of the green onions.
Layer on the rest of the of the tator tots. On top of the tator tots add the rest of the bacon bits, cheese and green onions. Pour 3/4 cup milk over the top.
Cover and cook on high for 4-6 hours. Mine was done in about 5 hours.
