I have the answer to your easy appetizer needs, yes I do. And believe me, anyone who loves guacamole, tomatoes and great Mexican flavor will LOVE these cute little stuffed tomatoes.
It’s something you can make ahead, which is always a great thing when you’re entertaining.
As far as making these ahead goes, I’ve had some in my refrigerator for a couple of days and they look as good as they did day one.
There’s enough lime juice coating the avocado to keep it from turning brown. If I was making these for party, I would probably make them the same day, but early in the day would definitely work.
Now let’s talk about how delicious these really are.
It tastes like you’re eating guacamole, which I think is one of the best foods on the planet, but because all of that avocado goodness is tucked into a tomato half, you don’t need chips.
That means it’s a super healthy appetizer and you can eat like a half dozen of these and not feel guilty (….not that I actually did that…well maybe?).
I also love that the avocado is still chunky and you get a little crunch from some cucumber. Then just for fun, to give these a little kick, I added just a tiny bit of jalapeño pepper.
All and all, I have to say that these are likely to be a big crowd pleaser at any gathering and would even be delicious as an easy side dish with your dinner.

Mexican Avocado Stuffed Tomatoes
Mexican Avocado Stuffed tomatoes are an easy make-ahead appetizer delight with a wonderful creaminess from the avocado as well as a little kick from a hint of jalapeño pepper.
Ingredients
- 4 roma tomatoes, halved and seeds and ribs scooped out
- Juice of ½ lime
- 1 clove garlic, grated
- ½ tsp cumin
- ½ tsp salt
- ¼ black pepper
- 1 avocado diced into small cubes
- ⅓ cup seedless cucumber, diced into small cubes
- 1 tbsp jalapeno, finely chopped
Instructions
- Whisk together lime juice, garlic, cumin, salt and pepper.
- In a medium mixing bowl, gently toss together avocado, cucumber, jalapeno, cilantro and lime jice mixture, until evenly mixed and well coated.
- Stuff prepared tomatoes with avocado mixture.
- Serve at room temperature or chilled.
