My Mixed Berry Granola Bars have been very popular, so I was really excited to try another granola bar combination.  With granola bars, I feel the possibilities are endless!  This time I started out intending to make a peanut butter chocolate chip bar.  That was all fine and good, but when I poured the hot sauce over the rest of the ingredients, the chocolate chips melted.  So instead, chocolate peanut butter granola bars were born and I have to say, they’re quite delicious!

If any of you out there have any ideas on how to make this without melting the chocolate chips, I would love it if you left me a comment.  If I can’t figure out how to keep the chips from melting, I think I’ll try peanut butter raisin granola bars next time…why not? As I said, I think the possibilities are endless.

But for today, here is my chocolate peanut butter granola bars, what I like to call a happy accident!

Chocolate Peanut Butter Granola Bars

  • 2 cups oatmeal
  • 1 cup roasted peanuts, roughly chopped
  • 3/4 cup honey
  • 1/4 cup brown sugar
  • 3 tbsp creamy peanut butter
  • 1 1/2 tsp vanilla
  • 1/4 tsp salt
  • 1 cup semi sweet chocolate chips

Preheat oven to 350 degrees.

Spread oatmeal evenly on a baking sheet.  Bake for 10-12 minutes, until toasted and golden brown, stirring once or twice.

Reduce oven to 300 degrees.

Butter a 9×13 baking dish and then line it with parchment paper.

Add honey, brown sugar, peanut butter, vanilla and salt to a sauce pan.  Bring to a boil over medium heat, stirring frequently,  Once mixture comes to a boil, boil for 1 minutes, stirring constantly.  Remove from heat.

Combine oatmeal, peanuts and chocolate chips in a large mixing bowl.  Pour honey mixture over top.  Stir until well combined and chocolate chips have melted.

Pour into prepared baking dish.  Spread with a spatula or lightly buttered hands until even.  Bake for 25-30 minutes.

Cool for at least 2 to 3 hours before cutting.  To cut, pull out of the baking dish by the sides of the parchment paper and place on a cutting board.  Store at room temperature.
