I have to tell you, these beans are good and it’s one of those dishes that gets better the next day. I actually ate this for lunch for three days straight and enjoyed every single bite! Perhaps I shouldn’t be sharing that, but they’re that good!
It’s smoky from the smoked paprika, a little sweet from the brown sugar and the perfect amount of salty from the bacon. Just yum…..seriously.
I also really love that the list of ingredients are pretty regular ingredients that are easy to keep on hand. This is so great if you get invited to a last minute potluck.

These smoky beans are also easy to make. Cook some bacon, saute some veggies, whisk together a quick sauce and mix it all up with a trio of beans.
At this point, it’s ready to bake OR you can refrigerate it if you want to bake it off later. And, as I already mentioned, the leftovers taste even better the next day.
This is the perfect kind of dish to bring to a potluck and would also be great at a summer barbecue. It will be the dish that disappears quickly.

Smoky Three Bean Bake
Smoky three bean bake is sure to be a hit at any summer barbecue or potluck. It's easy to prepare ahead of time and the sweet and smoky flavors are sure to be a crowd pleaser.
Ingredients
- 4 slices bacon, chopped
- 1 medium red onion, finely chopped
- 1 green pepper, finely chopped
- 6 cloves garlic, minced
- 1(8oz) can tomato sauce
- 1/3 cup packed brown sugar
- 1 tbsp cider vinegar
- 1 tbsp agave or honey
- 1 tbsp dijon mustard
- 1 tsp smoked paprika
- 3/4 tsp kosher salt
- 1/2 tsp black pepper
- 1/4 tsp cayenne pepper
- 1(15oz) can black beans
- 1(15oz) can cannellini beans
- 1(15oz) can pinto beans
- cooking spray
Instructions
- Preheat oven to 325 degrees.
- Heat a large nonstick skillet over medium heat.
- Add bacon to pan, and saute for 5 minutes or until crisp.
- Remove bacon from pan and drain on paper towels.
- Add onions, green pepper and garlic to drippings in pan, saute for 6 minutes or until tender, stirring occasionally.
- Remove from heat and cool slightly.
- Combine tomato sauce and the next 8 ingredients (through cayenne pepper) in a small bowl, stirring with a whisk.
- Add beans to onion mixture and pour sauce over the top.
- Mix well to combine.
- Place mixture in a 3 quart baking dish coated with cooking spray, and sprinkle with the reserved bacon.
- Cover with foil and bake at 325 for 30 minutes.
- Uncover and bake an additional 30 minutes.
