This summer I decided I was going to plant a little herb garden on my deck. I planted mint and it’s growing really well, so I have a lot of mint. I grow the mint mainly because I like to have it on hand when I want to make mojitos (I love mojitos). But with all of the mint I have, I thought I should branch out a little bit. Earlier this week I took some mint and lime juice and mixed it with some ginger ale and it was SO good. It was super refreshing and a perfect soft drink to sip in the afternoon.
So yesterday, I started thinking about what I could come up with for a cocktail, other than a mojito, using mint. What I ended up doing was taking the ginger ale mint soft drink another step and I added Jameson whiskey. It was a perfect summertime sipper. I’m not a huge fan of whiskey, but the mint and the lime really mellow out the flavor of the whiskey.
In the end, I have to say that this drink is equally good with or without the whiskey. So whether you’re looking for a non-alcoholic afternoon sipper or something a little stronger at cocktail time, give this one a try. You won’t be disappointed!
Ginger Mint Sipper
- 1 1/2 oz Jameson whiskey (optional)
- several fresh mint leaves
- juice of 1/2 a lime
- ice cubes
- regular or diet ginger ale (I used diet)
Pour Jameson into a tall glass (if using) and add mint leaves and lime juice. With a spoon or a wooden muddler, crush up mint leaves so that their flavor comes out.
Add ice and pour in enough ginger ale to fill glass.
ENJOY!

Lisa - My standard (ha, for the 4 or 5 times a year when I drink) is tequila with a squeeze of lemon, a squeeze of lime, and then fill the glass with ginger ale - I bet your mint would be an awesome addition.
