A mojito is a great summer drink and since we’ve had all of this warm weather, I’m definitely thinking about summer.  Warm summer evenings just beg for sitting out on the deck and sipping a nice cold mojito.  The mint and the lime are so refreshing.  But not just any mojito will do for me…..yes, I’m a mojito snob!  It has to be fresh lime and mint, muddled together by hand, club soda or sparkling water, not Sprite and certainly not any kind of pre-made mojito mix.  So what I’m saying is that it has to be a hand crafted mojito, or don’t bother.  I know, that’s harsh, but I like my mojitos how I like them.

This is how you make a perfect pitcher of mojitos.  Try it, you won’t be disappointed.

 

The Perfect Mojito

  • 2 limes
  • 1/4 cup agave syrup (you could also use simple syrup)
  • a handful of fresh mint leaves, about 15 leaves or so
  • 1 cup rum, I used Bacardi
  • club soda or sparkling water (I had Pellegrino on hand)
  • ice

Cut limes in half and squeeze juice into a pitcher.  Add agave, mint and rum and muddle together with a wooden spoon.

Divide mixture between 4 cocktail glasses filled with ice.  Top each glass with club soda or sparkling water.  Garnish with a slice of lime and some more mint leaves.
