We love soup at my house and eat it pretty much all year long, no matter what the temperature is. As much as I love soup, I don’t tend to order it very often at restaurants.

For the most part, I find that soup in restaurants tends to either have little flavor or it’s way too salty. Thankfully, most homemade soup is not that difficult or time consuming to make and it’s far superior to most restaurant soup.

This Instant Pot chicken tortellini soup is one that’s so easy to make. After a little chopping, everything but the tortellini goes into the Instant Pot. Once the Instant Pot has done its thing, you remove the chicken and add the tortellini.

While the tortellini cooks, you shred the chicken to stir back in and then dinner is done. The results are soup that’s full of flavor and tastes like it took hours to make instead of 40-ish minutes.

This makes a big batch which is great because the leftovers are perfect for a quick and easy lunch. That, my friends, is a win-win situation.

A delicious dinner AND enough leftover for a couple of scrumptious lunches, all with little effort on your part. What’s not to love about that?!

Instant Pot Chicken Tortellini Soup

Ingredients

  • 4 boneless chicken breasts, about 1 1/4 lbs
  • 2 large carrots, peeled and sliced
  • 2 large stalks celery, sliced
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 tbsp fresh thyme, minced
  • 1 tbsp fresh oregano, minced
  • 2 (15 oz) cans diced tomatoes
  • 8 cups low sodium chicken stock
  • 1 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 bay leaf
  • 1 (9 oz) pkg fresh cheese tortellini
  • 2 tbsp fresh parsley, chopped
  • 2 tbsp fresh basil. chopped

Instructions

  1. Place the chicken breasts in the bottom of the Instant Pot in a single layer.
  2. Add the carrots through the bay leaf to the pot.
  3. Set the Instant pot to manual for 10 minutes.
  4. Once finished, quick release the steam.
  5. Uncover and set pot to sauté to bring to a boil.
  6. Remove chicken breasts from the pot and place in a bowl.
  7. Once soup has come to a boil, add tortellini and cook for 7 minutes.
  8. While tortellini cooks, shred chicken and add back to the pot.
  9. Stir in parsley and basil before serving.
