Grandma’s Comfort Food

Fall is making a big appearance here in Minnesota. Last night we went out for dinner and I had to wear a jacket for the first time in I don’t know how long AND I slept with my down comforter for the first time in months. Summer will always be my favorite season, but Fall is definitely my next favorite.

This Fall weather gets me to thinking about the holidays and all of the yummy food that goes along with them. That reminded me of a wild rice dish that my Grandma used to make.

I don’t have the recipe, but I remember it being a baked dish that was full of celery, onion, mushrooms and crunchy water chestnuts and I always loved it. So, I decided to set out and come up with my own version of this favorite.

Let a Rice Cooker Do All the Work

This recipe makes a big batch of wild rice pilaf, so it’s perfect for a holiday gathering. I think it would be a scrumptious side dish for Thanksgiving, because it pairs really well with poultry. It’s also fantastic with grilled or sautéed chicken breasts.

Instead of baking my wild rice pilaf like my Grandma did, I made it in my Hamilton Beach Rice and Hot Cereal CookerAfter a little prep work and quickly sautéing the veggies, the rice cooker does all the work. It’s totally fool-proof and turns out perfectly.

When the rice is cooked to perfection, the rice cooker beeps to let you know it’s finished. If you’re not ready to serve the dish, it will automatically switch to warm and will keep the rice warm for up to 12 hours.

Appliance Versatility

Wild Rice Pilaf

Wild Rice Pilaf is an easy side dish packed with savory flavor from celery, onion and mushrooms along with crunchy water chestnuts. It’s sure to be a crowd pleaser, which makes it perfect for holiday gatherings.

Prep Time 10 minutes
Cook Time 1 hour
Total Time 1 hour 10 minutes

Ingredients

  • 1 tbsp olive oil
  • 3 ribs celery, sliced
  • 1/2 large onion, chopped
  • 1 cup sliced cremini mushrooms
  • 1 1/2 cups wild rice, rinsed
  • 6 cups chicken stock
  • 1 (8 oz) can sliced water chestnuts
  • 1 tsp garlic powder
  • 1 tsp dried thyme
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 cup fresh parsley, finely chopped

Instructions

  1. Heat oil in a skillet over medium heat.
  2. Add celery, onion and mushrooms to skillet. Saute until onions are translucent and mushrooms have released their moisture, about 5 minutes.
  3. Combine all ingredients, except parsley, in the rice cooker or a large pot.
  4. Select whole grain setting.
  5. If cooking on the stovetop, bring mixture to a boil, reduce heat to simmer and cook for 1-1 1/4 hours, until the liquid has been absorbed.
  6. Stir in parsley right before serving.
