Yes, you heard right, a red velvet cheese ball! How good does that sound?! Well it sounded pretty good to me. I was out browsing around Pinterest (major time sucker, I know) one day when I came upon this recipe by Taste and Tell and I just HAD to make it. The great thing was, it called for red velvet cake mix and I just happened to have some leftover mix sitting in my pantry from when I made red velvet cake batter truffles. I had been trying to figure out how I could use the rest of it up and this sounded perfect.
The recipe is really quite easy, you basically put everything in a bowl, mix it up, form it into a ball, chill it and cover it with crushed up white chocolate chips. That’s it! It would be the perfect thing to make for a Valentine’s Day celebration, you can whip it up in no time and it is really delicious.
Red Velvet Cheese Ball
- 8 oz cream cheese (I used light), softened
- 1/2 cup butter, softened
- 1 1/2 cups red velvet cake mix
- 2 tbsp brown sugar
- 1/2 cup powdered sugar
- 1/2 cup white chocolate chips, slightly crushed
Put cream cheese and butter in a mixing bowl and cream together with a mixer.
Add cake mix, brown sugar and powdered sugar, mix until well combined.
Once mixture is well combined, turn out onto a piece of plastic wrap and form into a ball. Refrigerate for at least 2 hours.
While the cheese ball is chilling, lightly crush white chocolate chips. I did this by putting them in the blender and pulsing until I has the right consistency.
Once cheese ball is chilled, unwrap it and place it on a piece of parchment paper and do any necessary re-shaping.
Gently press white chocolate onto cheese ball until well coated. Serve with vanilla wafers.
