Thursday’s Recipe Rerun – A Sandwich Parade

As you all probably know by now, my life has been a little crazy….I know, I need to stop talking about it, but it will get better soon!  Anyways, I’m all about the quick and easy meal right now, so that I have a little less to stress out about.  Enter the sandwich.  Sandwiches can be such a life savor on a busy day, they can often be put together with leftovers that you already have on hand and usually require little or no cooking.

Today I’m sharing three of my favorite quick and easy sandwiches.  You can have dinner on the table in no time on a busy night with one of these delicious sandwiches and then move on with the rest of your night!

Slow Cooker Mexican Beef Sandwiches

This sandwich does require some cooking (unless you happen to already have some of this delicious beef on hand in your freezer), but the meat cooks in the slow cooker all day and then at dinner time, all you have to do is chop up the toppings and dinner is ready to go!

Tuna and Cheddar Panini Melt

This is a tuna sandwich taken to another level, but it’s so quick and easy to make.  After mixing together a few ingredients and spreading it on bread slices all you have to do is grill this up until it’s crispy and melty and dinner is ready!

Buffalo Chicken Wraps

These wraps are a great way to use up a rotisserie chicken.  They come together in minutes and are so flavorful!  Perfect for any busy night!
