OK….let me just start out by saying….I know…. I’ve become somewhat obsessed with using cake mixes for things other than cakes, especially red velvet cake mix. But there seem to be so many possibilities and they’re all so easy and who doesn’t like easy? So I keep looking for new ideas. I knew that cake mix could be used to make cookies but I wasn’t sure what you added to the mix. After doing a little research, I found out all you need to add are two eggs and 1/2 cup of vegetable oil. Then I added some white chocolate chips just for fun.
Needless to say, these cookies were so easy to make. And I have to tell you, they are GOOD! They are crispy around the edges and soft in the middle, what’s not to love about that? My biggest challenge with these is going to be refraining from eating them all myself… I’ve already had two and they went down real easy. I must get them into the freezer quickly!
Red Velvet Cookies
- Red velvet cake mix
- 2 eggs
- 1/2 cup oil
- 1 cup white chocolate chips
Preheat oven to 350 degrees.
In a mixing bowl, add cake mix, eggs and oil. Mix until well combined.
Add white chocolate chips and mix until well incorporated.
Line 2 cookie sheets with parchment paper or coat with cooking spray. With a small scoop or two teaspoons, drop cookie dough onto cookie sheets.
Bake for 10-12 minutes. Let cookies cool on pans for a couple of minutes and then transfer to a rack and cool completely (although, they taste pretty darn good when they’re still warm).
