Not long ago I was browsing through some other blogs when I happened to come across a recipe for vanilla cake batter truffles on Things That Make You Go MMMMM.  I happen to LOVE cake batter.  One of my favorite ice cream flavors is cake batter, so when I saw these cute little truffles, I knew I had to make them, especially when I saw how easy they were!  I even had all the ingredients I needed in my pantry. I decided that I wanted to make them with a red velvet cake mix and then  I dipped half of them in white chocolate and half of them in semi-sweet chocolate.  They turned out to be SO delicious.  They would be a perfect treat to make for Valentine’s day!


Red Velvet Cake Batter Truffles

  • 1 cup red velvet cake mix
  • 1/4 cup sweetened condensed milk
  • 1/2 cup white chocolate chips
  • 1/2 cup semi-sweet chocolate chips

Place cake mix in a small mixing bowl and add sweetened condensed milk.  Stir until well combined.  The mixture shouldn’t be too wet, but if it seems too dry you may need to add another tablespoon or so of the sweetened condensed milk.

Place mixture in the freezer for about 15 minutes.  Then form into small balls and place on a baking sheet lined with parchment paper.

Chill balls in the freezer for another 15 minutes (I chilled mine in the “outdoor” freezer).

Meanwhile, melt white and semi-sweet chips in two small bowls in the microwave.  Once truffles are chilled, dip them in chocolate, coating well and place back on parchment paper.

Store finished truffles in the refrigerator or freezer.
