I just spent the past week on a cruise eating fabulous food every night for dinner.  Each night was a different menu and there were 4 to 5 courses to choose from, it really was a foodie’s dream come true!  First there was an appetizer, then soup and/or salad, followed by the main course and of course, dessert.  I should also mention that there were three to four choices within each of the courses.  Now that I’m home, it’s back to reality and I’m not particularly happy about that.  I’m sitting here wondering why no one is bringing me a menu or putting a napkin in my lap….oh well.  What I am happy about is the inspiration all of that good food gave me.  I now have some ideas of some new things to try my hand at, so I am looking forward to that.

Before I left for my vacation, I made this steak with a mushroom red wine sauce.  It was very tasty and special enough even for dinner on a cruise ship, but at the same time it was very simple and quick to make.  I used NY strip steaks because I happened to find them on sale, but sirloin or tenderloin would also work very well.

NY Strip Steak with Mushroom Red Wine Sauce

  • 4 NY strip steaks
  • 2 tbsp olive oil
  • 1 – 8oz package mushrooms, sliced
  • 1 shallot, thinly sliced
  • 1 cup wine
  • 1 tbsp balsamic vinegar
  • salt and pepper
  • 2 tbsp parsley, chopped

Heat 2 tbsp olive oil in a large skillet (I used a cast iron) over medium high heat until oil is just starting to smoke.  Season steaks with salt and pepper and add to skillet.  Cook on first side for four minutes, turn over and cook for about another three minutes for medium rare.  Remove from pan and cover loosely with foil to keep warm.

Reduce heat to medium and add a little more oil if necessary.  Add mushrooms and shallots to pan, saute for about 5-7 minutes, until mushrooms are browned and shallots are soft.  Season with salt and pepper.

Add wine to pan and use a spoon to scrape up any browned bits.  Bring to a boil and let reduce by about half.

Stir in balsamic vinegar and chopped parsley.

Top steaks with mushroom mixture and sauce.  Serve immediately.
