Gluten Free Peanut Butter Cookies

Quick, easy, delicious……that’s what these peanut butter cookies are.  Oh… AND they’re gluten free, plus they have yummy little white chocolate chips in them.  Sounds like perfection , doesn’t it?

When I say these delightful cookies are quick and easy, I’m not kidding.  One bowl, one baking sheet and about 5 minutes to mix it all up.  After 10 minutes in the oven, you have a crispy on the outside, slightly gooey on the the inside delicious little peanut butter, white chocolate treat.  So go ahead and bake up a batch and see for yourself!

Gluten Free Peanut Butter Cookies

  • 1/4 tsp salt
  • 1 large egg
  • 1 cup natural creamy peanut butter
  • 1/3 cup sugar
  • 1/4 cup brown sugar
  • 1/4 cup mini white chocolate chips

Preheat oven to 375 degrees.

In a medium mixing bowl, whisk together salt and egg until egg is very frothy and turning pale yellow.

Add remaining ingredients and stir until well combined.

Divide dough on a baking sheet lined with parchment paper in 1 tablespoon portions (a small scoop works really well for this).  I got 24 cookies.

Press down on cookies with a fork to form a crisscross pattern.

Bake in preheated oven for about 10 minutes, until light brown.
