Who doesn’t like French Onion Dip? Even Steve, who doesn’t particularly like caramelized onions (crazy, huh?) or sour cream loves it. Now I know it’s easy enough to go buy it from the grocery store, but have you ever made your own? It’s SO much better than store bought! It’s not hard to make it and it doesn’t take many ingredients, either, only six (I count salt and pepper as one). What it does require is a little bit of patience. You have to caramelize the onions, which can’t be rushed, but it’s so worth it. But while the onions cook you can be doing other things in the kitchen, as long as you are checking on them and stirring every few minutes.
The onion mixture is basically the same ingredients that you would use if you were making French onion soup, but instead of adding stock, you stir it in to sour cream. Super easy and super good! I’ve also found that this dip is delicious as a topping for baked potatoes and I used it as a spread on a roast beef sandwich. It was scrumptious!! So it’s definitely not just for dipping chips.
French Onion Dip
- 1 large red onion
- 2 tbsp olive oil
- 1/2 tsp dried thyme
- 1/4 cup white wine
- salt and pepper
- 1 – 16oz container light sour cream
Chop onion. Heat olive oil in a skillet over medium heat. Add onions and saute for a couple of minutes until they start to turn translucent, then add thyme and reduce heat to medium low.
Continue to cook onions over medium low heat, stirring occasionally, until very soft and golden brown. Be patient, this will probably take around 30 minutes, but it’s totally worth it. Once onions are golden brown, add wine and continue cooking until wine has evaporated. Add salt and pepper to taste.
Allow onion mixture to cool slightly and then stir into sour cream.
Serve with chips or as a topping with baked potatoes or as a sandwich spread.
