Cucumber Spa Refresher

So, a couple of weeks ago, Steve and I had a little “stay-cation” in downtown Minneapolis.  We had a great Mexican dinner at Barrio, saw “Beauty and the Beast” at the Orpheum and then hung out at The Local, which is our favorite pub downtown.  After all that excitement, we spent the night at one of the hotels downtown.  The next morning we were planning on going to Hell’s Kitchen for Brunch.  This a really cool, quirky place and they’re known for their brunch, which includes live music.  But…..when we got there, it was crawling with people, due to the fact that there’d been a 10k earlier that morning and, apparently, everyone had decided they should go there for brunch afterward.

We really didn’t feel like waiting for a table, so we went back to our hotel and decided to have brunch at the restaurant there.  Well let me tell you, brunch at Marin was a delightful treat!  They started us out with one of the best scones I have ever had and then I had a fantastic bacon, gruyere and spinach omelet along with perfectly cooked hashbrowns.

So what does all of this have to do with this cucumber spa refresher?  Well, the other great thing on the menu at Marin was what they called their “natural refreshments”.  They all sounded so refreshing and healthy and Steve tried one called Spa.  It was cucumber, agave nectar, lemon and soda and it was incredibly refreshing.  The flavor of the cucumber came through without it being over-powering, there was a little tang from the lemon and just the right amount of sweetness from the agave.

It was so delicious and refreshing, I had to come up with my own version.  I think the cucumber spa refresher I came up with is a pretty darn good re-creation.  It’s light, refreshing, slightly sweet and healthy!  I think it would be a perfect drink to serve at a brunch or a shower.

 

Cucumber Spa Refresher

  • 1 medium cucumber
  • 2 tbsp agave nectar
  • juice of one lemon
  • sparkling water
  • ice
Cut cucumber into chunks.

Place cucumber chunks in a blender or food processor, along with 2 tbsp water.

Blend until cucumber is completely pureed.

Strain puree through a mesh strainer into a bowl, pressing on the puree with the back of a spoon to get all of the liquid out of it.

Stir agave nectar and lemon juice into strained cucumber.

For each drink, add ice to a glass and add 1/4 cup of the cucumber mixture.

Pour in enough sparkling water to fill the glass and stir gently to combine.

Garnish with a lemon slice, if desired.

Store remaining cucumber mixture in a tightly covered container in the refrigerator for up to a week.

*This will make about 1 cup of the cucumber mixture.  You could easily double or triple this recipe if you’re serving this to a large group.*
