Chocolate Peanut Butter Granola Bars

My Mixed Berry Granola Bars have been very popular, so I was really excited to try another granola bar combination.  With granola bars, I feel the possibilities are endless!  This time I started out intending to make a peanut butter chocolate chip bar.  That was all fine and good, but when I poured the hot sauce over the rest of the ingredients, the chocolate chips melted.  So instead, chocolate peanut butter granola bars were born and I have to say, they’re quite delicious!

If any of you out there have any ideas on how to make this without melting the chocolate chips, I would love it if you left me a comment.  If I can’t figure out how to keep the chips from melting, I think I’ll try peanut butter raisin granola bars next time…why not? As I said, I think the possibilities are endless.

But for today, here is my chocolate peanut butter granola bars, what I like to call a happy accident!

Chocolate Peanut Butter Granola Bars

  • 2 cups oatmeal
  • 1 cup roasted peanuts, roughly chopped
  • 3/4 cup honey
  • 1/4 cup brown sugar
  • 3 tbsp creamy peanut butter
  • 1 1/2 tsp vanilla
  • 1/4 tsp salt
  • 1 cup semi sweet chocolate chips

Preheat oven to 350 degrees.

Spread oatmeal evenly on a baking sheet.  Bake for 10-12 minutes, until toasted and golden brown, stirring once or twice.

Reduce oven to 300 degrees.

Butter a 9×13 baking dish and then line it with parchment paper.

Add honey, brown sugar, peanut butter, vanilla and salt to a sauce pan.  Bring to a boil over medium heat, stirring frequently,  Once mixture comes to a boil, boil for 1 minutes, stirring constantly.  Remove from heat.

Combine oatmeal, peanuts and chocolate chips in a large mixing bowl.  Pour honey mixture over top.  Stir until well combined and chocolate chips have melted.

Pour into prepared baking dish.  Spread with a spatula or lightly buttered hands until even.  Bake for 25-30 minutes.

Cool for at least 2 to 3 hours before cutting.  To cut, pull out of the baking dish by the sides of the parchment paper and place on a cutting board.  Store at room temperature.

We're making our 2nd batch of these now. The kids asked for cold lunch so they could have them again.

I didn't try to cool the batter because I like the chocolate mixed.

I added the chips last (after mixing dry and wet ingredients). They stayed fairly well during baking.

These sound so good and look even better. A lot of granola bars get eaten around here (a grandkids' favorite!) but I seldom make homemade ones. I'm going to try these!

I agree with Joy. Mix the oatmeal and peanuts and pour the honey mixture over. Since you bake it, your chips are going to melt anyway. But maybe after they come out of the oven add a layer of choc chips on top?

I don't know, but these look scrumptious! And will definitely be added to my cooking rotation.
