Is your fridge like mine and still full of your Thanksgiving leftovers?  Right after the holiday, we usually just recreate our holiday meal with the leftovers.  But after a couple days of that it’s time to get a little creative with the leftovers.

I always find soup to be a really good way to use leftovers from my holiday meal.  Soup is such a flexible dish that you really can’t go wrong with it.  I love soups that are nice and creamy, so this potato turkey soup was perfect for my leftover turkey and mashed potatoes.

But how did it taste?  This soup turned out so creamy and cheesy, my whole family loved it.  It was full of flavor and so hearty.  All you need to turn this into a complete meal is to add some bread or a tossed salad.

Leftover mashed potatoes were a great way to thicken the soup and make is nice and creamy.  Plus it added great flavor.  To make sure the soup had nice texture, I added diced potatoes which also added more flavor, along with carrots, celery and onion.

The final touch to make this soup totally delicious was to add some flavorful sharp cheddar cheese, which also added to the silky texture.  Make this soup and you won’t even feel like you’re eating leftovers.

Cheesy Turkey Potato Soup

Ingredients

  • 1 onion, chopped
  • 2 ribs celery, chopped
  • 2 carrots, peeled and chopped
  • 2 medium potatoes, diced (I like to leave the skin on, but you can peel if you like)
  • 2 cloves garlic, finely chopped
  • 1 tbsp olive oil
  • 1/4 cup parsley, finely chopped
  • 2-3 cups leftover mashed potatoes (I used 2 cups, if you use more your broth will be thicker)
  • 6 cups turkey or chicken stock
  • 2 cups shredded sharp cheddar cheese
  • 2 cups turkey, chopped
  • salt
  • pepper

Instructions

  • Heat olive oil in a large soup pot over medium heat. Add onion, celery, carrots, potatoes and garlic. Saute for about 5 minutes until veggies are starting to soften. season with salt and pepper.
  • Add mashed potatoes, breaking up with a spoon and stirring until they’re heated through.
  • Add stock, stirring to combine with mashed potatoes. Add a little more salt and pepper. Bring to a boil.
  • Turn heat off and add cheese, a little at a time, stirring constantly until cheese is completely melted. (Turning off the heat prevents the cheese from becoming grainy).
  • Turn heat back on to medium high heat and bring to a bubble.
  • Stir in turkey and parsley, reduce heat to low and simmer, covered, for at least 15 minutes, stirring occasionally, to allow flavors to develop.
  • Check seasonings and add more salt and pepper if needed.

    I replaced the cheddar cheese with Asiago, added the left over corn and a half a cup of white mushrooms. The soup was fantastic! Thanks for the recipe!
