Blueberry Mint Lemonade

I would like you all to meet my new friend, THE NINJA!

My sister-in-law, Cady, has been raving about The Ninja ever since she got one for her birthday in July.  She thinks it’s the best thing EVER and she’s been blending things like crazy ever since she got hers.  I couldn’t help myself, I started looking into it  and I have to admit, I got blender envy.

Then I saw that Kohl’s had the one I wanted on sale, plus I had a coupon and I knew the time was right to get my own!  As soon as I got it home, I whipped it out of the box and made my first smoothy on the spot.  It came out perfectly blended and I’m now in love!

I decided this would be the perfect time to try a new technique I had seen Lindsey at Pinch of Yum  use to make lemonade.  She actually blended the entire lemon in the blender and then strained the juice through a fine mesh strainer.  It looked so much easier that squeezing all of that juice, one lemon at a time.  You can see Lindsey’s recipe for her Blender Lemonade by clicking here.

I decided that I wanted to make a blueberry mint lemonade, because I love that combination of flavors.  So I put The Ninja to the test and gave the lemons and blueberries a whirl.  It turned out so good (don’t worry, any blender will give you great results) and it was so easy.  I’ll totally make lemonade this way again and I think the flavor combinations are endless.

Blueberry Mint Lemonade

  • 4 lemons
  • 1 cup blueberries
  • 1/2 cup sugar
  • water
  • 1/3 cup mint leaves

Cut lemons into chunks, leaving the peel on.

Place lemons, blueberries and sugar, along with 4 cups of water in a blender.

Blend until the fruit is pureed (there will still be small pieces).

Strain through a fine mesh strainer into  a large bowl or 2 quart pitcher.

Add enough water to make 8 cups of lemonade, about 2 1/2 to 3 more cups.

Roughly tear mint leaves and add to lemonade.

Refrigerate until cold, which will also allow the mint flavor to develop.
