Thank goodness it’s Wednesday! This week has been moving at a snail’s pace for me, so it feels great to finally be halfway through the week. I’m so happy that I think we should celebrate the middle of the week with these delicious baked chicken taquitos.

 

Baked Chicken Taquitos – Great as an Appetizer or Light Meal

I love recipes that use cooked chicken and so I always try and keep it on hand in my freezer.  Sweet and savory chicken salad and chicken taco pinwheels are a couple of my favorite recipes that use cooked chicken. These baked chicken taquitos are also one of my favorite recipes.  

These taquitos are great because they’re perfect as either an appetizer or a light meal. On top of that, they’re fairly healthy. Instead of the traditional method of frying them, they just get a little spritz of cooking spray and are baked in the oven.

A Great Make Ahead Recipe

They come out of the oven perfectly crispy and delicious. You can feel pretty good about the filling, too. It starts with plenty of shredded chicken breast and gets mixed up with salsa and a little cheddar cheese. How good does that sound?

Not only are these taquitos quick and easy, you can also make them ahead of time, freeze and then reheat in the oven when you’re ready to serve them. To reheat, put the taquitos on a baking sheet, spray them with a little more cooking spray and bake in a 350 degree oven for about 15 minutes, until they’re warmed through and nice and crispy again.

This makes them perfect for serving when unexpected guests pop over or you need dinner in a big hurry. Just pull however many you need out of the freezer and pop them in the oven. They’ll be ready in no time.

What Should I Know About Making This Recipe?

  • Any cooked chicken will work great in this recipe. I’ve used rotisserie chicken as well as cooked chicken breasts.
  • The taquitos are delicious dipped in salsa and avocado ranch dip.
  • The best way to freeze this for later is to freeze them on a baking sheet in a single layer. Then you can store them in a zip-loc freezer bag and they won’t stick together.

Baked Chicken Taquitos

Cooked, shredded chicken make these baked chicken taquitos so quick and easy. They're perfect for an appetizer or light meal.

Cook Time 15 minutes
Total Time 30 minutes

Ingredients

  • 8 oz cooked, shredded chicken breast
  • 1 cup restaurant style salsa or you favorite salsa
  • 1 cup sharp cheddar cheese
  • 10-12 small corn tortillas
  • cooking spray

Instructions

  1. Preheat oven to 375 degrees.
  2. Combine chicken, salsa and cheese.
  3. Mix until the chicken is well coated.
  4. Cover tortillas with a damp paper towel and microwave for 30 seconds to soften.
  5. Spread a couple tablespoons of the chicken mixture down the center of each tortilla.
  6. Roll up tortilla and place seam side down on a baking sheet, securing with a toothpick if necessary.
  7. Once you’ve rolled all of the tortillas, coat them lightly with cooking spray.
  8. Bake in preheated oven for 15-20 minutes, until crispy and cheese is melted.
  9. Serve with additional salsa, sour cream or avocado ranch dip.
