Almond Butter Raisin Granola Bars

OK….first of all, I can’t believe that my daughter, Nicole will be marrying her fiance, Nate in LESS than two weeks!  In seems like we were just celebrating their engagement and starting the planning process.  Now we’re down to the final details and hoping we haven’t forgotten anything major.  I do have one thing I’d like to ask all of you, could you please pray for beautiful weather for us?  The wedding is going to be outside at our cabin, so a sunny day in the upper 70s would be picture perfect.  We do have tents rented so we’ll be fine if the weather decides not to cooperate, but we’ve all been envisioning a beautiful summer day.  But no matter what the weather is, I know this will be a special day that Nicole and Nate remember forever!

Now onto granola bars.  I’ll admit that I’ve gotten a little obsessed with making granola bars, but there are just so many great combinations and you really can’t go wrong.  So I keep making more granola bars, plus Steve keeps asking for more!  But, seriously, these are really flexible.  You really can add whatever combination of nuts and dried fruit that you like and if you’re into flax seed and wheat germ, go ahead and add that as well.  They’re so easy to make and they taste so much better that anything store bought AND I believe the homemade variety are healthier also.

So you go ahead and enjoy these granola bars…..I’ve got to call Nicole and see how her to-do list is coming along and then work on my own to-do list!! 🙂

Almond Butter Raisin Granola Bars

  • 2 cups oatmeal
  • 1 cup sliced almonds
  • 2/3 cup honey
  • 1/4 cup brown sugar
  • 3 tbsp creamy almond butter (I use unsalted)
  • 1 1/2 tsp vanilla
  • 1/4 tsp salt
  • 2 cups raisins

Preheat oven to 350 degrees.  Butter a 9×13 baking dish and line it with parchment paper, set aside.

Spread oatmeal and almonds on a large sheet pan.  Bake for 10-12 minutes, stirring occasionally, until toasted.  Transfer mixture to a large mixing bowl.

Reduce oven heat to 300 degrees.

Combine butter, honey, brown sugar, vanilla and salt in a saucepan.  Bring to a boil and then cook for 1 minute, stirring constantly.

Add raisins to oatmeal and almonds.  Pour sauce over mixture and stir until thoroughly combined.

Pour mixture into prepared baking dish, pressing the mixture evenly into the pan.

Bake for 25-30 minutes in 300 degree oven until golden brown.  Cool for at least 2-3 hours before cutting.  Once the bars are cool, remove from pan and cut into pieces.  Store at room temperature.
