A Fabulous Homemade Italian Dinner

Yesterday I had no inspiration for dinner….does that happen to you? I really wanted to make dinner at home. Steve had been out of town all week and wasn’t going to be home until after 7:00, so I knew going out to eat wasn’t a good idea. But I really didn’t know what to make, plus I didn’t want to go to the grocery story, so it had to be something with ingredients I already had on hand.

Finally after rummaging around the kitchen I discovered I had all the ingredients to make Chicken Parmesan with Homemade Pasta AND Homemade Artisan Bread! A feast, right?! Cooking this ended up being a lot of fun too, because I was able to recruit Alex to help me out.

After I got Alex into the kitchen with me, he found a good jazz station on Pandora and I taught him the technique for making pasta. Together we mixed up the dough, kneaded it and rolled it out….turns out he’s a pretty good pasta maker! Then he breaded the chicken for the chicken parmesan and I worked on the bread. We had a great time cooking and listening to good music.

The recipe I used for the Chicken Parmesan is the same recipe I use for Veal Parmesan, I just used chicken instead. It’s really easy and it’s SOOOO good! The pasta takes a little bit of time to make, but it’s a fun way to spend an evening and it, too, is SOOO delicious. I was able to make the bread easily because I already had the dough in the fridge and it’s a super easy method for making delicious homemade bread.
